Hi,
I am iffing and umming about taking the plunge and having an affair. I've met someone I really like, and now we want to take it to the next level. How can I be sure this is the right thing for me... I've never done anything like this before.

"Caring" is a complex emotion. It is not a binary either you do or you don't " Black or white" matter. There are many shades of grey of "Caring" as you should know, given your profile name 😉

I was in exactly the same dilemma... I was given some great words of wisdom from a friend and serial adulterer.
He said that once you cross the line it means you no longer care...
What you do with that information is up to you...

You have obviously done things right so far by having a few meets to see if yous are compatible rather than just diving into it So my advice to you Yes go for it. Firstly make sure both of you are 100% covered with alibi when meeting and then be prepared to have no regrets. Enjoy it have fun without it taking over your life. The secret to a good affair is for neither party to be too pushy and remember lower number of quality meets always beats high quantity of average meets.

Sadly ended a while ago and can’t find the spark again but as an eternal optimist I will keep looking

Just ask yourself - can live with it, and look your partner in the eye and carry on, then go for it.
But live with it you will have too.
